A 2019-ben telepített tölgyes egyre mélyebbre nyúló gyökérzete a kezdetek óta finom gombafonalakkal fonódik össze; ebben a csendes szövetségben születnek meg azok a szarvasgombák, amelyek egyszerre ásványosak, tiszták és rendkívül koncentrált aromájúak. Terroirunkat a nedvsségtartó talaj, a bőséges csapadék, valamint az erdő aljnövényzetének gazdag, de fegyelmezett élete határozza meg – nincs monokultúra, nincs intenzív bolygatás, csak tudatosan irányított, természetes egyensúly. Minden egyes szarvasgomba ennek a helynek a lenyomata: az árnyékos tölgykoronák között beszűrődő fény, a lassan melegedő reggelek, az őszi ködök és a gondosan képzett keresőkutyák munkája együtt adják azt a tisztaságot, amely Margit Ligetet megkülönbözteti más termőhelyektől.
